    I did a light search but didnt see a specific topic about cheese and cheese making. So Im waiting on a couple products to try my own cheese. First will be Mozzarella and second will be Ricotta cheese.

    I need some other items to make Parmesan but I will try my hand at that later. Some interesting tips Ive found: use a wine fridge to keep the right temp for aging cheese. (If you dont have a cheese cellar which most people dont) Place a cup of water in there if it gets too dry. Also needed is the right chemicals, and a cheese press, and of course cheese cloth. The cheese press looks simple to make. And a couple containers for the cheese press.

    Ive made Ricotta cheese before but just winged the temp. Now that I found a good recipe with proper temps It should be better! Parmesan doesnt look too hard to make, just takes some time to properly age it.

    anyway back to what I have on order...some citric acid and rennet tablets. I tried to make an order on Amazon and they wanted $20 in shipping!

    Just ordered some cheese wax and Mesophilic Direct-Set Starter Culture , and some cheese salt to make some cheddar, asiago and parmesan at some point. I need to get a small wine fridge soon.

    i did look but for the cost they have listed I can buy a new wine fridge cheaper and brand new! I assembled my cheese press, I need to get some lighter springs but I think its going to work. I have to get the router out and trim down the edges, and maybe route a drain for liquid and it should work great.

    Very cool, ya we have looked at some on there (wife wants a wine fridge) and found some good prices. Those usually go pretty quick though.

    I thought about doing some mozzarella a long time ago but the investment was pretty high compared to what I was able to get some quality stuff for. I want to at minimum cold smoke some cheese but I have some other things I am trying out first.

    Not homemade but highly recommend Red Dragon cheese. I buy it from central market. Has mustard seeds in it....good stuff

    Home brew mozzarella is definitely not cost effective, but that's not the point of making it yourself.

    It isn't quick or easy to make, either. That said, unless I was in a pinch I'd never buy from a store again.

    not really a lot of stuff, milk citric acid and rennet...they usually have rennet tablets in most grocery stores, and some health food stores prob carry citric acid and rennet. Im waiting on my citric acid to come in the mail so I can try making some.
