David thanks for the cooking chart! The one I had didn't show cooking temps or meat temps that high. It made all the difference, the pork butt was delicious yesterday!

 

Back in the '80's and 90's, while I was racing dirt bikes (hare scrambles and enduro) I was also the AMA Referee for our club. I had to certify results and oversee tech inspections at our races on club grounds. Louisville Downs (horse track) was the site of an AMA Grand National Dirt Track event. The promoter had to have an AMA sanctioned club to serve as "host" for the event. He'd let us be corner workers (flagmen) and whoever our Referee was (me for 5 years) would work with the National Ref to run the event. I got to help with pre-race and post race inspections, as well as signing off on the results before they were submitted to the AMA national office for scoring national championship points. During the qualifications, heats, and finals, I would stand just inside the rail in turn 4. It was incredible seeing these guys dragging their knee sliding sideways at 140 mph! This was during the era when Honda decided to see if they could challenge Harley for supremacy on the dirt tracks.

And Honda RULED.....With a guy named Bubba Shobert. After about 3 years of Harley getting their ass handed to them, they threatened to pull out if AMA didn't do something to make them competitive again. So the AMA required Honda's to run more weight AND a smaller rear tire.

And Honda STILL ruled.

So MORE weight and a smaller rear tire still.

Honda finally had enough and devoted all their resources to road racing again. Shobert went to pavement racing and looked to be the next star in that discipline. After the finish of a WERA road race (seems like it was in Atlanta??) where Shobert finished 3rd, he was stopped with the 1st place finisher in the back stretch, doing a burnout, when another rider slammed into his stopped bike. Shobert received a severe head injury and never quite recovered.
