    My better half freestyled and got me some Gorgonzola Dolca Cheese. Shit was ripe! Outstanding on a bagget topped with summer sausage. very creamy,sweet and dry at the same time. It has some chew and will make your breath rancid. She wouldn't come with in 10ft of me. Pear it up with a nice Stout or craft Burbon. Two thumbs up. After shots only.

    I tried a new batch of cheddar. I currently have it aging, this time the curds cooperated, it took a little longer to set the curds than the recipe said but still worked.

    Maybe at some point. I need to get the process down before I start smoking the cheese.I dont know how good this cheese will be but when I was making this batch with the raw milk I could tell it would make good mozzarella. So I may try that again since its relatively quick. This particular cheddar has to age a minimum of a month to try it out. another month and I can check the results.

    I also ordered some liquid rennet since they say the Junket tablets work but takes longer to set the curd which I noticed right away.

    I havent done anything since it takes some time, but maybe this winter. Its good to get a source for Raw whole milk.

    easiest to make is the fresh mozzarella, then use the leftover whey water to make ricotta...
