Hey Joe. From the description that looks like high quality wire. A bit overkill for LED light wiring IMO. You'd be fine with 16 gauge, I run 14 on mine. One thing I didn't see mentioned in the description is if the wire sheathing is heat resistant. This is important for wires running in your engine bay because over time the sheathing willl become brittle and could fail and cause a short or worse, a fire. Wiring made for home use doesn't take this into account and though it will work for a while, it's a gamble and potential disaster waiting to happen.
As far as wire routing, the two most popular ways to run them from the roof are:
    1. Stuffed into the small gap between the windshield and a-pillar. If done properly, you won't even notice the wire is there and it won't move even while driving.
    2. Drill a hole in your roof and run them under the headliner and down the a-pillar. There are marine grade bulkheads you can use to make this a really clean option.
The sky is the limit if you're creative though.

    Good luck

Thanks for the info. I didn't see anything and didn't even think about engine heat. Any specific wire recamondations is appreciated.

No need to overthink light wiring. If it were a custom audio build where the wire will actually affect the performance of the final product, I'd say get the good stuff. CCA wire should be good enough for your use. I've even seen people use an outdoor extension cord and cut the ends off to get pre-loomed 2-wire runs.
