    so what is better higher heat or slower bake? I tried a version of neapolitan it was decent but not great...maybe I had the oven too low? I had it at 375

    Neopolitan authentic usually goes at about 800f for a minute. For home stove get a pizza stone and crank to max, usually 550 or so. Good as you can do in regular oven. In a Kamodo you can get to those high temps or close.

    I cook all my pizza in the oven at 425 but like horstuff said, the hotter the better!

    how bout for a thicker crust? I put one on the grill and it burned the bottom, I should have left it closed up till It was up to temp inside but the stone was definitely hot.

    Yeah I was thinking that as well.

    True Neapolitan is thin as hell and doesn't take much time at all to cook at a high temp. For thicker crust it's a whole different game. Like 400 on the stone for as long as it takes for the cheese to melt golden brownish.

    Ah ok, well I just used that particular dough recipe. I guess what Im looking for is a crusty bread with soft interior. Not super thick but just enough for a crunchy outside and soft inside. There was a local place that had a good dough but it closed down over this past winter/spring. :(
