    Anyone ever did brisket low slow in smoker til stall and then wrap and finish in 325 oven? I might have to do that tomorrow for various fcked up logistical reasons

    My favorite so far is Slap Yo Mama, made in Louisiana.
    I think Bayou Platte but I don't have a container at the moment. It's kind of a pain to get locally.

    I'm not sure how far out you have to go. I was mistaken the 2 day season is a mini season & then there is a 8 month season starting in the beginning of August & ending at the end of March. In 2 areas the bag limit is 6 per person & 12 for everywhere else.

    It's pretty good, it's mainly salt, paprika, onion & garlic. It's not spicy.

    Salty or nah?

    I've found several to be salty as hell. SYM is all seasoning flavor, doesn't give much salty flavor. At least to my palate.

    No not too salty you can taste the spices. I was thinking of some other stuff in use with similar ingredients that's not spicy, this one has a little kick to it.

    The onion are a bitch to wrap with cold bacon but well worth it. The Sauce is actually better than well maybe not the bacon wrapped and smoked but almost. I still make the sauce just for a sauce on things. Yes it's that good. Together they should be illegal, but there not so make them.

    Yeah, I've done the high temp many times but timing tomorrow is sporadic, it's not just that I have short time but erratic time, I'll be juggling crap all day but damnit I'm getting that brisket cooked.
