Sorry if this has been covered, but is there a good reference site for a build/conversion from EFI to carburation on the 3rz motors? Part of me wants to have the simplicity of being able to adjust everything myself, get rid of the computer and a lot of the extraneous stuff...

I highly doubt it considering everything involved with the ECM and electronics.

I'm betting that there is noplace for the distributer on a newer 2.7, but certainly if you want to go back to carburated I understand. It would involve pretty much ripping out all the electrics and I'm sure that some of the street rod suppliers could help you replace them.

Nope, because there is no good reason to go back to a carb over EFI. Go standalone ECU if you want to adjust everything.

Simplicity is turning the key and driving off, day after day, regardless of temperature or elevation change. That's fuel injection.

Spending thousands in cash and hundreds of hours trying to re-engineer a modern engine just to have to constantly adjust it and have it not perform as well is the opposite of simplicity.
