    OK, brew day has arrived
    Currently 10 minutes from Vorlauf (recirculation prior to sparge)

    Its not an Old Ale.

    Between the latest Zymurgy (AHA magazine) and you guys, and my hopheadness, its NE IPA time!!!

    So the latest Zymurgh has a Focal Banger clone recipe.

    Rocking it with a minor (or not adjustment)


    5/27/17


    Water Treatment
    2 g Calcium Chloride
    8 g Calcium Carbonate


    8 lb Maris Otter
    4.25 lbs Avengard Pils
    9.5 oz German Acidulated

    Mash in @150

    7ml hop Citra Extract 60
    2 oz Mosaic 13.6% 10
    1 oz Mosaic 13.6% 5
    1/2 tsp Citric Acid

    4 oz Citra 13% Dry Hop

    WYeast 1318 London III

    I removed 1 lb Maris and .5 lb Pils from their recipe. Between double crushing and long slow sparge me and the GF have been seeing about 90% efficiency.
    She tried to make a Mexican Lager and ended up with an Imperial Mexican Lager.

    So the acidulated. I like to toss in a quarter lb or so to help with PH and to accentuate fruity esters and hop flavor. I forgot, went back to brew store, and there was an overage bag under the German Acidulated grain. Fuck it. 9.5 oz. Go big or go home. I will see what happens.

    When I start cooling the wort I will remove the jar of 1318 in the fridge from the last IPA or IIPA I made.

    I went all pellets because I dont want 4 freaking oz of Citra sucking up a half gallon of beer. I am seriously revisiting the concept of leaf hops for dry hopping. A pain and I think you get more acid from the pellets or hash.

    Save more, drink water. You wont know the difference aside from carbonation, and you certainly wont suffer from hops or malt withdrawal...

    And I am a traitor because it isnt a Defalco's Glass (local Houston homebrew shop).

    Soft, flexible, rubbery. And you can drop it without consequences!!!

    Opaque so will block sunlight.

    So New Labels. They havent arrived down here in Houston yet and we get their product (or we did, a year ago). Story was they were switching to cans, then I heard 12 oz 4 packs of the bomber stuff like that. I'll keep looking.

    Creme Brulee though, isn't a one man beer. Unless your tastes run to something sweet and heavy. Its a sharing with friends beer ...

    I looked at the shot. Was thinking "looks like an Oskar Blues Can". Then I paid more attention to the can on the right. DOH!

    That is one tasty beer. Me and the GF did a Colorado beer trip last June, and we visited Station 26.
    I think it was my favorite of what they had on tap.

    I was gifted a bunch of 1 oz leaf Sorachi Ace (15.1%) packets, and I want to use them up.

    So I am going to make a session ale, and Hop the crap out of it. But I'll probably dry hop with something else.

    Sorachi Mace:

    6 lbs Maris Otter
    2 lbs Munich Dark
    .75 lbs Crystal 65
    .25 lbs Acidulated Malt

    1 oz Sorachi Ace Mash Hops
    1 oz Sorachi Ace First Wort Hops

    I like Sorachi Ace. Dry hopped a Kumquat Saison with it. It added citrus and dill to the nose. I quite liked the dill, even though it sounds like a weird flavor to add. Never used it as a bittering hop however.
