Is there any way to use the touch screen to display phone content like an OBD app?

    Touch screen..no.
But you could display it with a video interface. Would just need a HDMI to composite adapter to show your iPhone.

You could get a ram mount with Ipad/Tablet mount, use the app with obd2 bluetooth connector with app on tablet of your choice, then you have a separate display and don´t tie up your touchscreen.
