I just wanted to know what size tire would be good to run on a 2017 Tacoma off road package truck if I put a 3"/2" leveling kit on it....

How big are you trying to go? I have a 3" lift and am running BFG 285/70R-17 Mud-Terrain KM2s on 17x8.5 Method Double Standards. They rarely rub on the cab mounts, near full compression.
