    Possibly too much water, I always fill a little below half and the outcome is really good. The longest smoke I did was the 30lbs pulled pork about 20hrs total and the water was not even close to being gone

    It wouldn't mess up a brisket. All the big teams smoke Waygu brisket in competition.

    $8 oz! Stuff is expensive, but damn is it tasty. That marbling is bonkers. Too rich for my blood, though.

    Same here. Would love a 26". How about we both keep an eye out; I get Waco and north, you take everything south of Waco :D.

    Sounds good. San Antonio had one for $40 in great condition and of course, it was gone in a few minutes

    I love my 26 but with only 3 of us it's a little over kill. What I would really like to do is convert a performer to hold the 26.

    Definitely a unicorn...I don't know why they don't sell them locally. It's always the 22, 18, or WSM. Such an underrated cooker. If I found that for 40 I would clean it up and flip it real quick. The grill grate for the 26 is expensive alone and probably costs more than 40.

    It is overkill if you just grill for the family, but using it as a smoker, that extra room really does help IMO. I hate overcrowding my cooker.

    Speaking of 26's. I coulda had this deal yesterday as well. It was a few exits down from where I picked up the WSM. it seems that people in the hood are the ones that do not know the value.

    Damn. Damn. Damn. Great pickup and hope you purchased a lottery ticket also! I would stand a better chance of winning the lottery than pulling that off here. Great job!

    I haven't used the water pan in a long time. In fact I replaced it with the heat shield from the bottom it fits perfectly and allows easier access to the fuel area. As per Harry Soo's method of smoking on the WSM. But I am no Harry Soo LOL. I just picked up a lid for the water bowl that also fits perfectly and is a bit thicker, will use just the lid in the future.

    Dump the pooper and use the proceeds for an ATC of your choice.

    Then again hard to argue with this logic...

    I just purchased the 304 Stainless Steel hinged grate for the 22" and total cost from Weber delivered was $78. They are not listed on the website and they only have a few left in stock. Tired of burning up the plated steel POS grate. The 26" grate is about the same price and supposed to be SS. I don't grill for more than 2 people and the 22" is about perfect for me. But if I was going to smoke on it too the 26" is a much better choice IMO. Agree with you on all accounts.

    I wish I could do a test of 26 vs WSM 22 and see what makes a better product.

    I still have my 22" weber, but I don't think I'm gonna sell it. im pretty sure I am going to turn it into a dedicated pizza maker. I could buy that pizza kettle thing or just build it myself. Or I could just turn it into a WSM.

    I will continue to use my Traeger till the day it dies and I can't fix it or upgrade it lol.
