    I only use the water pan if I'm doing an overnight smoke and don't want the temp to fluctuate and cause the temp sensor alarm to go off constantly.

    Yep although I purchased a second heat shield for mine. Cook on a wooden deck and want that heat shield! Gives a lot more room for coals that way and easier to reload if you need to.

    It is pretty thin and been looking for something a bit heavier duty. Couple of weeks ago discovered the lid for the water bowl and it will replace the heat shield. Some day.     I've used mineral salt for years. First it was Dead Sea salt, then black Hawaiian salt, etc. Lot less Sodium than table salt. And use Kosher salt for brine's and cures. The mineral salts IME don't take heat well and I normally use them on salads etc. and meats after cooking.

    Thanks to whoever it was that posted about Weber briquettes on clearance at Target several pages back. One of my local Target's had 10 bags and I picked up 5 for $32.

    Added extra awesomeness to its original awesomeness.
    Check Home Depot and Lowe's outside in the grill grave yard. My BIL found an 18.5" Weber Smoker for $134, only things missing were the cover and the heat shield. Called Weber and said they weren't in the box and they sent him the parts.
