I guess I am looking to go with 285 tires on my truck, Bilstines 5100 front and back. should I go with a smaller wheel? Would it make any difference except larger side walls?

Look at the overall weight with the wheel and tire combo and choose the lighter option. 0.5" in sidewall flex isn't really going to matter at that size, but the power/mpg hit from that size will so try to minimalize it.
