    Neapolitan cooks between 750-900 degrees. Look for leopard spotting on the crust and it should take no more than 1:30s to cook. Well, that's for "true" neapolitan lol. If you want really good dough use an older sourdough starter ;)

    Think I'm gonna buy an Akorn Jr for a dedicated Napolitano pizza setup. I love my full size Akorn but it smokes a lot if you crank it up to 600+ for pizza due to the grease from previous cooks. A dedicated one should work well for 12-14" pies. Anyone got a better high-heat device for ~ $100?

    Pizzagasm... I love that thin-edged crunchy crust that rolls up the side. Anybody here with a good recipe for that type of crust, I would appreciate seeing it.

    Good ideas, guys! I appreciate it.

    I've seen these before but I think they work with gas grills. I don't have one.

    Now this is pretty cool. A little concerning that one of the Amazon reviews I saw showed any "leoparding" like a good Napolitano pizza has. Makes me think the quoted temps are a little generous. I'll do more research here.

    That's neat too but same issue as using my big smoker. If you've used your grill for cooking regular food you're going to have billows of awful smoke when you try to crank it up to 600+ degrees.
