HI, ultimate Tacos, they lead the pack!! Hawaii, where dreams come true!

@Oldman808 ,dude, so jealous of that lifestyle. Even if you have a 5 day work week, the other 2 days are bliss.

I said at least 6 inches mandatory, of course you all think getting that close to the sun is better for the skin.

Same, 12 days Stat days here, but no 4 day work week other than those 12. Slave drivers in my area! But I do get 5 weeks vacation, so not complaining. As it stands, I have 14 weeks in the bank, they keep me here and won't let me take the 5 I'm entitled to yearly. It'll cost them eventually.

I used to live in NOLA. the FQ is good for a quick run thru and stops at nice places like the Monteleone. After that, live like a local and get out of the FQ, the city is amazing!

I've been there 27 years, should be more IMO. I also get 7 days "personal time". It's good for anything, not complaining, don't get me wrong.

I'd love to make it there one day. Probably not Mardi Gras. Hear it's a little too crazy that time of year.

My brother went for Mardi Gras, he wasn't impressed. Saying that, I would still like to go. So one day I'll make it there. Looks like a place that would be awwsome to experience. French Quarter sounds fun to me!

If you want a similar parade atmosphere but smaller crowds, do St Patrick's Day!! I actually enjoy it more than MG. Several parades on different days. Typically silk flowers (instead of beads) are handed out plus they throw full heads of cabbage, bags of carrots, potatoes, onions, lemons. You can walk away with the entire ingredients for a stew, just add roast! It's a couple thousand drunk Irish men and women walking in a parade. How can that not be fun?? Actually my avatar is from one of the Irish parades. That one is the 'Little past half way to St Paddys Day parade'. Half way would be in September but NOLA is far too hot for a parade so we host it in October, usually the Saturday before Halloween. Which brings on more parades!!

My avatar is from the ww2 museum in NOLA. A must see. We also love to ride the cable cars and get off at different stops. And don't get me started on the food

I had a pretty serious stall... almost 3hrs.

13 hours or so at 225-250f

I also smoked a rack of ribs During that time but I put them on later and pulled them earlier than the shoulder.

Some good info/folks on the TW smoking thread, I've been honing in my technique!

I've looked there a lot, but yet to try any of the techniques, like to try though. My smoker has been used exclusively for salmon, need to change that one day.
