    Wow! Thanks for that ringing endorsement! Don't sell yourself short, though. The rub gets the most out of your cook, so it sounds like you did some fine work at the pit, too!

    Ok. Report time.

    Brisket was borderline fail. It went into oven(225*) at around 165* internal. Wrapped in butcher paper. Checked it a little over an hour later and it was at 209 and fall apart tender, like overcooked tender :(. Pulled it and the flat was falling to pieces and dry :frusty:. Wrapped in foil and towels and I to cooler.

    Wound up pulling the flat and added beef broth. Made it salvageable. Borderline delicious actually. Well, the flavor was great with the pitface and post rehydration. Made tacos so it was a good save. The point was just about perfect. Had some moisture retention and sliced well. Ate my fill of it for sure.

    Now the real star of the show:

    This is after 2.5 hours at 250* in the oven on a rack. This made the house smell sooooo good.

    Added a whole stick of butter, brown sugar and honey. Covered in foil and back in for 1.5 hours.

    I can die happy after these and hard to imagine they can get better, but smoking them next time. Big big victory.

    The pitface spicy had an amazing sweet and heat on them. Balanced nicely with the sugar and honey. :fistbump:

    Now chillaxing and watching the prelim fights. Still a damn good day overall :bananadance:

    I'm paying now for drinking this afternoon at a VFW event. They had a whole hog, but it was dry. Wife said my pork was a lot better than this companies. Her dad, leader of the vfw, said the same. I told him to buy a reverse flow smoker for the vfw and I'd smoke the meats for the next event.

    Always great to get wife endorsement! Really want to build a reverse flow smoker someday. This propane one I got is decent but it's just there to bridge the gap.

    Oh great just when I was ready to cancel netflix because haven't watched it in months. I will watch this first though. Today.

    Another good one on Netflix is Cooked by Michael Pollan. It is 4 parts and the first is Fire. And the best, for obvious reasons. But it is a very good series overall and explains whey we do what we do, and like it so much.

    So getting tired of paying $4 to $6 for a bag of wood chips I bought a HF electric chipper shredder and am now rolling my own. I chipped up about 20lbs of red maple and 5lbs of apple wood today. FIL is delivering another supply of apple wood later this week so buy the end of the week I'll have well over $107 (cost of the chipper) in wood chips.
