play around with the water/beer/juice etc tray, if you want a deep bark just cut back

if your interested this is my rub i generally use

3 cup brown sugar
1/4 cup season salt
1/4 cup onion powder
1 teaspoon black pep
1 table spoon chili powder
2 tablespoon mustard powder
1 teaspoon ginger powder
1/2 teaspoon all spice
1 table spoon garlic powder

any remainder i mix with oj until sugar dissolves and i brush that on every hour or so or when i refill wood.

today since im doing shoulder i run that for 9-10 hours to 190

ill snap a pic of the progress on next refill

It is like a well tuned orchestra when all 3 are playing the same tune. When they are not..................well lets just think of the good times and not the bad
