    Great day! Served over 275 of these bad boys in the People's Choice event. We got a great response, too. We actually ran out 30 minutes before the event ended. Won't know where we finished until tomorrow evening, but we spanked our neighbors, including Fergolicious :D.

    Huge thanks to @RickS for coming to support us. Him and his wife are good people.

    Here's what I just picked up at Costco, passed on the tri-tips at $6.99 though they are well trimmed, what I bought for $2.79 recently was untrimmed.
    I would have possibly purchased a Choice brisket but all they had was Choice Certified Angus for the same price as Prime. No reason to pay more for Certified Angus of the same grade as non Angus, mostly a marketing scheme.

    Wow, with 275 tickets in the box there must have been plenty of poker chips too. Liked the guys who went with the pulled pork and brisket street tacos. Tasty treat but after they add the chipotle/lime/bacon coleslaw, the BBQ gets lost in the concoction. Bet it'd be great in something like a food truck though.

    I find the spray brings nothing but an excuse to look at the meats. Doing a store bought St.Louis style is not a bad start - using a store bought rub is not a bad way to start - using a store bought sauce is not a bad way to start either. The ribs are pretty fool proof, pull the membrane. The rubs are easy - don't use beef types on chicken, use chicken on pork and pork on pork. Sauces are subjective - to me, less is more.

    Let us know how it turned out - I'll post pics of my ribs then too - needless to say no complaints = no ribs left...

    Pulled the membrane and am pretty much following this guy's video. I am also not a big fan of using sauces and prefer to eat meats on their own merits and the prep work.

    It's been a while since I smoked anything. Bacon burnt ends and some salsa. This piece had what I think was a nipple on it.

    So without having to read all 754 pages what do recommend for a cheap beginner smoker setup . Keyword being cheap lol , I just want to try smoking at first without spending a a lot . Can I start out at $30-$50? :anonymous:
