I love cooking frozen steaks now

 

Where is the bacon?

 

Right?! wtf?

 

Is TODAY bacon day? Because that would be kinda cool. I usually reserve Sunday for bacon day, but yesterday we were both still stuffed from the night before so it moved to today. Just this once. Bacon, baked in the oven at 385F for ~20 minutes. Today we had it with waffles made on our cast iron waffle iron that was made in Philadelphia about 150 years ago and makes round waffles with fleur de lys patterns that must weigh near a pound apiece. Takes a heck of a lot of maple syrup to soften 'em up.

Took a couple pounds of the bacon I made today and cubed it then coated it with 1/2 cup maple sugar, and a tbl. spoon of roasted garlic and pepper for a nice bark. Couple more hours yet before supper is ready.



Think I underestimated just how much bacon fat would render into the mac n cheese....



Not that it is a bad thing.... Stirred it all in of course.

Changes didn't help the car. Actually made it worse.
That's ok still was 5th.
So now to chill and get ready for a major job first job in the am.

Car was in one piece. We left safe.
Some not so lucky..
Winning isn't everything in vintage racing. It's improving your self and the car.
So I consider it a win in that regard
