    My fiance cooks our sausage and peppers in the crock pot all day. Low and slow with some basic mild, and spicy sausage. Little pepper, salt, and garlic. A bit of water, and let them cook all together. Cooking them all day lets the sausage break down and the casing basically cooks away so they're super soft and tender. Definitely my favorite way to have them.

    Reminds me of this recipe that I do semi-regularly during the winter:

    • 1 pound smoked sausage, sliced (I like using kielbasa)
    • 1 1/2 cups rice (brown or white, either way is fine as long as it's not minute rice)
    • 2 3/4 cups hot water (not boiling; hot tap water is fine)
    • 3 chicken bullion cubes
    • 1 can (16 ounces) tomatoes, diced with juice (I like to use the cans that also include basil, garlic, and oregano)
    • 3 tablespoons tomato paste
    • 2 stalks celery chopped
    • 1 bunch green onions, chopped
    • 1 large green pepper, chopped
    • 2 cups carrots, chopped
    • salt and pepper
    Combine everything in the crock pot and mix it up in good shape, then cook it on low for 4-6 hours. I'll usually whip up a batch of cornbread or quick drop-biscuits to go with it, but it's also good on its own, in a tortilla with cheese & salsa, etc.

    Verdict: Delicious. Wish I had some chips for barbacoa nachos. The tacos were amazing though, just threw on some cheese and that was all it needed.

    I don't do the gringo tacos much (cheese). Cilantro, onion lime, and salt is all I used, but glad you liked it!

    We'll typically do queso fresco, cilantro, and a little minced red onion.

    I go gringo occasionally with cheese and picante :)

    I love cheese too much to pass on it. And I forgot to save some onion to dice up for today. Might hit the store later to grab another, cilantro and chips.
