    I took 1 first and 2 3rd with different Gose in O'Zapft, a Dallas Area Contest on German Styles only. The GF took a 3rd in Hefe.

    I brewed 2 different porters simultaneously Saturday, not a 10G batch, because...

    One of them is an attempt on a clone for Crux PCT Porter, which is a magnificent work of art, a balance of dry and roast. I need to make that beer, so I will see what happens. I found a recipe on BrewToad and made a couple changes.

    6 lbs Domestic 2 Row
    2 lbs Maris Otter
    1 lb Simpsons Double Roasted Crystal
    8 oz Torrified wheat
    8 oz German oak smoked wheat
    8 oz Belgian Chocolate Malt
    8 oz British Pale Chocolate Malt
    4 oz American Roasted Barley
    4 oz Black Patent

    London Water Profile

    Mash in @140 half hour, @150 half hour

    .5 oz Chinook (13.4%) 60:00
    .5 oz Cascade (6.3%) 30:0
    .5 oz Mount Hood (5.6%) 30:00
    .5 oz Chinook (13.4%) 15:00

    Wyeast 1056

    OG 1064

    He was calling for 1 lb of wheat, and I passed by the German Oak Smoked and said "YEAH BABY!!!"


    While Googling for "Dry Porter recipe" I found one with German grains, but didn't bother with the Spalt hops suggestions. It didn't call for wheat, but that wasn't going to stop me. I know I won't end up near an Alaskan Smoked Porter but it should add a nice twist.


    Target Water Profile: Pilsen (Light Lager)

    10 lbs Avangard Pilsner
    1.5 lbs German Munich Dark
    2 lbs German Oak Smoked Wheat
    .5 lbs Dehusked Carafa II Malt
    9 oz Simpsons Double Roasted Crystal Malt
    8 oz Black Patent

    Mash in @140 half hour, 150 half hour

    .5 oz Mount Hood (5.6%) 60:00

    Um, ok yeah. If I find anything calling for 100-150L Crystals, its getting Simpsons Double Roasted because it is a Godly malt. That is now a standard part of my recipe formulation.

    I also special ordered a bag of Weyermans Floor Malted Czech Pilsner for when its Pils time again.

    Always drink Maine's hoppy beers when they're young.

    I've had both, I liked waters quite a bit.

    You should definitely try it if you like pumpkin beers. Warlocks darker qualities tone down some of the pumpkin spice and people buy the hell outta it.

    Tonight is the real insanity. Working on 15G of Gose, just to get sparged and innoculated, then tomorrow after work, boil and finish it. Right now almost done with sparge 1. Then sparge 2, collect about 18.5G wort, boil for 10, chill to 100 or so, transfer to coolers and add probiotics.


    17 lbs. German wheat malt
    8.0 lbs. Belgian Pilsner malt
    2 lbs German Acidulated malt
    2 oz Czech Saaz hops (first wort hop)
    0.75 oz. coriander seed, freshly ground (0 min.)
    1 oz. kosher salt (0 min.)
    2 bottles (60 capsules) Swansons Probiotic L. Plantarum (10B/cap)
    Wyeast 1007 (German Ale) or White Labs WLP029 (German Ale/Kölsch) yeast
