    Yeah. Home made.

Same as for my pork carnitas rub:
Grind together the dry rub: Sea salt, whole black peppercorns, coriander, cumin, cayenne pepper, oregano, granulated garlic and chopped dry onions.

Except I added 4 packets of this stuff. Gives a richer red color.
    IMG_1376.jpg

And sorry, I don't measure stuff. Next go 'round might be a little spicier.

I left it relatively mild because @Skell 's bringing his home made salsa to the potluck. And that stuff will burn both of your holes :bananadead:

Any pics of your carnitas? I plan to make some for the first time soon (shoulder is currently on sale locally), have not made it yet. Have done al pastor and cochinita pibil so far with great success, though both could be improved on now that I've made them.

    Recipe for cornbread.

(The left column is the doubled quantities. I highly recommend this as it takes that much to make a full skillet or Dutch oven full. Small skillet or baking dish, use the smaller quantities obviously)

I get lime, I get lemon.

    I do NOT get orange.

Like I couldn’t even drink orange juice while eating a carnita.

    Maybe I’m just not adventurous
