My truck runs about 1000 rpm when starting up, in park. When shifting it in gear it slows way down to about 500 rpm, is this normal?

Yep. Normal behavior for a Toyota. Mine does it, '09 Tundra did it, ‘04 Tundra did it, Parents Seqoia does it. Standard. Usually once it’s on and warmed up when going back to park it’ll stay lower unless the AC is on.

Yep, normal. And, if you were to let it sit on park for a few more minutes it would make it's way down to around 550 as well. One of the ways it conserves fuel is to idle low like that, which also creates a "surge" when the A/C compressor kicks in FYI. that is also normal ;)
