    I like sweet corn muffins, with a good honey butter that's some good stuff. We get our honey from a local back yard bee keeper, GOOD stuff.

    When I was in Tx there used to be some bbq places that had sweet corn muffins. They were so good! Also a salad place that had prob the best sweet cornbread, super moist and just the right amount of sweetness. Sadly it went out of business many years ago. I only went for the cornbread really.;)

    I just made some pulled pork crock pot tacos for dinner tonight I'll have to work on getting some of my recipes down for this thread all ready pulling a few I like.

    Pot luck at work tomorrow and had planned on making some pork belly burnt ends on the smoker.

    And then winter official came in, 14* and wind chill is a couple degrees below zero, and it is snowing (again). Screw it I'm getting too old for that shit. Maybe by this weekend I'll be ready mentally to smoke again but not yet.

    So Tater Tot casserole it is. 43 pages and not one person has mentioned it?! Have had it on Wednesday nights in NC at hot dish dinners at Baptist Churches to, well hell everywhere else including Mn.

    Lot of variations usually ground beef, french cut green beans and tater tots of course. And can go from the basic kid friendly to using rotel, hot peppers or whatever floats your boat.

    My version that is going in to work tomorrow:

    2 pounds med spice pork sausage
    1 medium onion diced
    4 cloves garlic
    diced green pepper

    carmalize onion and garlic in cast iron skillet and butter
    add pork and pepper and brown

    When meat is browned add:
    1 can cheddar cheese soup
    2 cans cream of mushroom soup
    2 cans french cut green beans drained
    3/4 cup frozen peas
    3/4 cup frozen corn
    3/4 cup of milk
    salt and pepper

    I prefer the Mini tater tots and start with a layer on bottom.
    Fill half way and then another layer of tots.
    Add rest of meat mix and then last layer of tots on top.

    May not look like much now but already taste awesome. 6 quart Instant Pot non stick bowl in fridge. Will set it to run for 4 hours on high (yes it is the same as a crock pot in slow cook mode) when I get to work. When it is time to eat dump 2 cups shredded cheddar cheese on top and stir. Done.
