    MT stuff, RTT stuff, the usual.
    • 3 cups apple cider vinegar
    • 3 tablespoons dark brown sugar
    • 2 tablespoon Texas Pete's
    • 1/2 tablespoon red pepper flakes
    • 1 teaspoon ground black pepper
    • 1 teaspoon kosher salt
    • A squirt of ketchup (not traditional for Carolina style, but mostly to add a little color, otherwise kids won’t eat it.... they’re weird like that).
    Cool it all up in a saucepan, let it cool. Too spicy or vinegary? Add some more brown or white sugar. Not spicy enough? Add more Texas Pete or RCF.

    Transfer to a jar / bottle and let it sit for a day.

    I love me some good finish sauce, tell me more, what’s in yours? I use one I found on smokingmeatsforum.com ACV, brown sugar, red pepper flakes, fresh ground black pepper, garlic salt and Toni Chachere's creole seasoning.

    I was at Sams Club yesterday and I saw they had a "flat" beef brisket for $33 I saw the bigger ones which I think are whole but would one of these flat briskets be good for 4-5 people? I think it was roughly 6 pounds. Can you smoke these? I've never smoked/cooked brisket before but would like to try it. If these would be good for a first timer, what is the cooking process (temp& time)?

    I've baked a few things, pies, pizza....but always make sure its only after a few other cleaner smokes as to not get all the funky flavors. :notsure:

    I wouldn’t recommend a flat for ur first time lol they’re hard to get right and not dry out
    The flat is part a whole “packer” brisket, not a type of brisket :)

    Its cheaper if you get the whole brisket. $33 for a flat is ridiculous price. Lots of tips in this thread...

    Weave it out on parchment paper first. Cover it with another sheet and roll it up. Then lay it over or around whatever it's going on and unroll it like a decal.
