    I sautéed some onions and bell peppers and mixed them with some cooked sausage links a had that I chopped up. Then I whisked a bunch of eggs, cream, and cheese together. Greased the tins and then added the veg/sausage mix and then poured in the eggs until about 3/4 full since they rise. I gave each of them a stir to get everything mixed together. Into the oven at 350 until the eggs were mostly cooked. I didn't want to cook them 100% to give a little wiggle room when reheating them.

    our season is basically done. We filled our tags thankfully! We were running out of wild game but we are back in stock now :D It should hold us to next hunting season.

    I didn't get to go out this year sadly. One of my friends did though I'm hoping I can get some off of him, I looked online to buy some and it's stupid expensive and even worse once they put in the shipping.

    Potato Chicken Casserole (45min cook time, lengthy prep)

    You’ll Need (for the potatoes):

    2.5 lbs of Yukon Gold cubed, boiled and mashed potatoes.
    1 cup of sour cream.
    1 cup of shredded cheddar cheese.
    1 (2.8 oz) can of french-fried onions.
    2 tsps of salt.
    1 tsp of coarse ground pepper.

    You’ll Need (for the chicken):

    1.5 – 2 lbs of poached and shredded boneless skinless chicken breasts.
    1 (26 oz) bag of thawed and drained frozen mixed vegetables.
    1 cup of sour cream.
    2 tsps of ground mustard.
    1 tsp of garlic powder.
    ½ tsp of pepper.
    1 cup of shredded cheddar cheese.

    How to:

    Preheat the oven to 375°.

    Mix together the potatoes ingredients and spread the mixture in a baking dish.

    In a large bowl, mix together the chicken ingredients and spread over the potato mixture.
    Sprinkle 1 cup of shredded cheddar cheese over the top and bake for 45 minutes.

    One of my favorite things to grill are my pheasant poppers.

    Ingredients:
    Pheasant breasts/thighs
    Jalapenos
    Cream cheese
    Bacon
    BBQ sauce (I like sweet baby rays)

    Cut up the pheasant breasts/thighs into about one inch chunks. Core the jalapenos and slice into coins. Stuff jalapeno coins with cream cheese. Wrap pheasant chunk and stuffed jalapeno with half a piece of bacon and put on a skewer.

    You can cook these in the oven, but in my opinion a charcoal grill is the best way to do them.

    Grill for about 15-20 minutes, turning every 3 or 4. Just before they are done, brush all sides with a generous amount of bbq sauce.

    Ya that's my preference, I tend to hand mash them so I get little chunks of potato in the bites also. :)

    Pork Belly Burnt Ends: AKA... Bacon Bites or Pig Candy or just Bacon :dancingbacon:

    These are posted a lot in the smoking thread too by lots of people (not my recipe, just my method)

    Quick and dirty rundown:

    Cut Pork belly into bite sized cubes
    Drizzle with EVOO (or wooster sauce or whatever you'd like)
    Coat with favorite rub or seasonings
    Space out on rack and smoke for 2-3 hours (or 165* IT) at your desired smoking temp. (225* usually)
    Place in foil pan with butter, brown sugar, and honey (amounts vary every time I make them, but usually 1 stick of butter, 1/2 cup brown sugar, and a few Tblsps of honey per foil pans worth)
    Cover with foil tightly and return to smoker (or oven at this point. Heat is heat) at 225* for about 2 hours, stirring halfway.
    Uncover and let the sauce tac up on them
    Enjoy.
