I am looking for spark plugs and oil filters, but everyone seems to reference the engine model number. Unfortunately, I cant find the flippin model number on the truck, engine or registration. So what is is for the v6?

It's on the build plate on your driver's door jamb. The 'G' part of GRN225/245/265 designated that you have a 1GR-FE engine.

But it's also under the hood on the emissions and vacuum hose stickers.

I've never really seen such a thing when there is only one choice for a v6 for the year.

Most catalogs just ask for displacement.
