My mouth is watering and teeth grinding looking at that recipe. Goddamn I love my crock pot. Going to have to try that with a moose roast, I haven't bought beef in 5 years.

Maybe a dumb question... is beef more expensive than your “local cow”?

Well beef is expensive for sure, I would certainly be paying for it if I didn't luck out on the yearly moose hunt the last few seasons.

It takes a long time to eat through a 1000 lb animal.

I’ve never had moose, but I’d be grateful to partake. Let me know if we can swap dinners!

    Seriously. Please let me know.

    Pork Tacos

**EDIT: I now use 1/2 tsp. nutmeg, 1 tsp. chili powder, and 1 tbsp. cumin**
    • 7-8 lbs. pork shoulder, bone in
    • 1 white onion, chopped
    • 1 jalapeño, chopped
    • 4 garlic cloves, chopped
    • 3 tbsp. olive oil
    • 2 tbsp. soy sauce
    • 1/4 cup lime juice
    • 1 tbsp. brown sugar
    • 1 tbsp. thyme
    • 2 tsp. black pepper
    • 1 tsp. nutmeg
    • 1 tsp. cinnamon
Prepare all of the ingredients for the shoulder and blend together (blender, food processor, etc.).
    AD1543D4-6C81-4BF3-B68B-59ED724CC7AC.jpg

I also trimmed some of the excess fat from the shoulder.
    6B240E0B-27D9-40E8-A934-476177CB6B2B.jpg

Combine the ingredients to the crock pot and coat the shoulder generously.

Cook on low for 8 hours. Shred the meat with forks or tongs when finished. Leave it in the juices.

    Mango Salsa
    • 2 mangoes, chopped
    • 1/4 red onion, chopped
    • 1 tbsp. lime juice
    • 1 tbsp. cilantro, chopped
Place the ingredients in a bowl and mix with a spoon. I used a 1/2 tbsp. dried cilantro because I forgot to get fresh cilantro.

Assemble pork, mangoes, and other toppings of choice (queso fresco, habanero sauce) onto a corn tortilla. As always, makes plenty for leftover lunches!

Lol..... Well there is no real recipe.

Al you you do Brown 1.5-2 lbs Spicy sausage then mixture of cheese of your choice. I use sharp cheddar, string mozzarella and Swiss all shredded except the string cheese I cut thta up in chunks.

You then start with a layer of shredded hash browns on the bottom then add the remaining ingredients in layers each covered with hash browns then scramble 9-11 eggs pour over mixture bake 350 for 60 minutes cold (after being in fridge all night) which I did with this one or 40/45 minutes fresh made. Then add a layer of cheese on the top the last 15 minutes of baking.
