    It's a quick one that I use pretty frequently, because a 30-40 minute recipe is handy for after work.

    • 1 1/8 cup warm water
    • 1/4 cup oil
    • 2 Tablespoons yeast
    • 1/4 cup sugar
    • 1/2 teaspoon of salt (a little less if you use sea salt)
    • 1 egg
    • 3 1/2 cups all-purpose flour (bread flour is ok, but a little chewier)
    1. In a stand mixer (or a bowl, if you don't have a stand mixer) combine water, oil, yeast, & sugar. Let rest for 15 minutes while the yeast activates
    2. Mix in two cups of the flour, the salt, and the egg into the liquid using a dough hook. Add in the remaining flour 1/3-1/2 cup at a time. You may need slightly more or slightly less flour, depending on your measure on the water. The dough should be be smooth and not sticky.
    3. Cut and shape dough into 12 balls and place in a 10" skillet and let rise for 10 minutes
    4. Preheat oven to 400 degrees while you wait
    5. Bake 10-15 minutes, until the tops are golden brown and the rolls are cooked through (depending on your oven and your cast iron this may take as long as 25 minutes).

    I'm too lazy to look back to find out who posted the recipe. Beef roast and gardenaira and stuff and godammedisthis good!!! One of the few things I've made and ate every last bit.

    The original recipe that I found years ago called for a 9x13 pan; I use a skillet because they're easier to clean since they're well-seasoned by now :laugh:

    Im cooking 5 whole yard birds in the crockpot first thing Monday mornin (an older game rooster,plucked, and 4 that are 3/4 grown,skinned, they looked like quail on steriods) i got em soakin in some homemade zesty Italian, pickled jalapenos, and franks hot sauce and a little Cajun and lemon pepper seasoning, and ill pat em dry and rub a little more of that dry stuff on em before they go in the pot, and after they are done ill pop em on the smoker for an hour or so to crisp up the skin on the old bird and add some pecan smoke flavor.

    They will come sir... Right now they just look like raw chickens crammed into a plastic container big enough to hold em and then sat in a cooler on the front porch (its supposed to stay below freezing the next 3 days, which never happens in bama)
