Advice on tire/wheel setup

I'm about to lift my truck with an adjustable icon 3.5" stage 3 lift set at either 2.5" or 2.75" with a 1" body lift. I was wondering should I go with 18 inch xd wheels with 275/70/18 or 17 inch xd wheels with 285/70/17. The tires will be cooper stt pros. I'm looking for advice that would require no cutting or trimming. Also, what offset would you recommend?
