I backed into a log (at tailgate height) and have ordered a new tailgate - unpainted.
I know the color, Silver metallic, from the driver door jamb.
    2015 Tacoma
How do I go about painting it? Spray can? undercoat? etc

I would just have a shop do it.

Wont be anything for them to make it look great.

And, you will probably get a lifetime warranty on the paint.

    Just my two cents :)

100% take it to a local shop if you want it to look good.

Our local NAPA specializes in automotive paint. They can match it and fill rattle cans. After a couple applications of clear coat, it looks factory.

If the paint condition of the rest of the truck is in excellent shape, have a local body shop paint it for you. You'll get the best result and it should look like new again.
