About to refill my coffee cup for the 3rd time.
Hopefully by the time I get to the bottom of it I will be awake enough to give a shit today.

If you decide to rent, I recommend Cat Trax Rental in Liberty Hill. They only charge for one day if you pick up Saturday morning and bring back Monday morning. When our house was being built, I asked the builder if I could move some of the dead brush off our lot and over to the empty one next to us. He said he couldn’t complain if he wasn’t here to see it, so I rented the Bobcat, got out the chainsaw, and hired an old friend who has been in construction for over 25 years. And by “hire”, I mean a 1.75 liter of scotch.

By Monday morning, our lot was slick as a whistle, and the empty lot next door was no longer empty!

If you don’t have one or two already, get some temperature probes. I don’t use them on ribs, but everything else gets smoked to temp, not time.

 

I'm gonna remember this, hopefully. I'll probably ask you about it again though.

Probes are great for pit temp! Well, electric is pretty easy to maintain... Cook til close on finishing temp for meat and probe for feel for finish. Has yielded much better results for me. For brisket anyway. It's done when it's done. I start probing at 195*.

Side note... Going shopping today for a meat concoction I have planned

 

I'm off tomorrow if you need assistance sampling that concoction.

 

Got a food contest I'm entering a pic in for this weekend. Hopefully Saturday cooking. But I'm open for yard work help and beer drinking

They will also deliver and pickup, for an additional charge; the Bobcat and trailer are a bit meaty for a Taco. I pulled it with mine, but I don't live far up in the majestic heights of LV, like you do....

 

Huh? The probes I use are electric, and stay in the meat the whole time. They let me know what's happening under the lid, because "if you're lookin', you ain't cookin'...."

 

Work remotely?...

 

Meant electric cookers. For temps I use a dual probe. One for pit temp and one in the meat. I just poke around starting at 195* for doneness. But yes. No peeking. . Except for a pic every now and then of course

 

I will def look in to that, that would save oodles of time having them drop n pick.
