    This is the flour I ordered from Italy... came out great and is meant for the higher temps of a wood fired oven and Neapolitan pizza.

    What did you get the temp up to? Margarita Pizza is my all time fave. I have the kit to do the kettle grill pizza oven now you have inspired me to get off my butt and put it all together. I love smoked pizza (which I do now and then) but that's a labor of love because it takes a while to cook. 90 Seconds I could eat bunch of them. lol

    Haven't invested in a infrared thermometer...I know I need one...the thermometer on the kettlepizza was maxed out and saw was the one on the weber lid. If I had to guess 800Plus. If I had to guess the stone was 600 or more.

    i have, you have to find raw milk for the best results. The cheese thread has some stuff..I havent put any time into it lately though...

    Nice I'm going to have to try this out. What wood did you use for it? I have an IR thermo so once I do it I can see what the temp is.

    Only cheese I've done so far is cream cheese, want to try some other from the cheese thread, would love to do some buffalo mozz but not sure where to get the milk for it.

    Last cook when I accidentally made calzone it was pecan wood, this time around I used 2 split apple logs and 1 persimmon.

    Hmm took my split logs to catch fire like 5ish minutes...i put the lid on and made the pizza. So maybe 15-20min of preheat and threw the pizza in.

    I was happy I put the pizza in early, If I waited any longer my pizza may have burnt up, the temp probably shot threw the roof like 900ish if I had to guess.

    Recommendations on infrared heat thermometer??

    Edit: it was a windy day to make a wood fired pizza in a kettle so helped a lot of temps to climb quickly.

    I just bought a cheapo off of ebay...I think they all are same technology...I would guess. All made in Japan or China...
