    Honestly I have no idea, but my stuff almost always has nice rings. Might be a result of putting the meat on cold. This brisket was out of the fridge for maybe 20 minutes before I put it on the smoker.

    Just an iPhone shot. I have about 4-5k worth of camera gear, and use my phone. :anonymous:

    I’ve never use photoshop, don’t even have it. Not that I’m a purist or anything, or have anything against what can be created in PS, but it’s a lot less post processing, and work, to get it right in the camera.

    I may break out the gear tomorrow to see what I can do with it.

    Trimmed, loosely. Just whacked some off here and there, and left 1/4-1/2” when possible.

    Fat cap down.

    I was shooting for 250, but wind and cold gave me problems keeping it that high. Ended up at 220-225 for about 6 hours with cherry wood on the WSM with water
    In the pan. Then I got sick of monitoring it, so I put it in a foil pan, added more rub, a little water and Worcestershire, covered, and put it in the oven at 275. I probed it in the flat at 200, then at 205, and it was tender at 207 in the flat. Vented for a few minutes, then let it rest in the oven for 1-1.5 hours before slicing.
