I want to put some 285/60/18’s on my 2017 DCSB, can I fit these on W/O a lift if I get new wheels with say a 0 offset? Need some expert advice on the topic.

They should but it will be close. Mud flaps and plastic may have to be adjusted. Anything more aggressive than 0 offset will likely have more rubbing issues.

I've been considering 18x9 Method NV's and 285/60/18. It's still a taller tire than OE and has a larger contact patch. Yes you lose sidewall but that's not an issue unless you're doing heavy off roading and need to deal with big rocks. There's also quite a few A/T tires in that size.
