    Wife had to work, I had the boy all day, and was in the mood for something smoked. Was digging through the freezer to see what I could do for dinner. Look what I dug out. Vac packed portion of a butt I did a few months back. Put it straight into the crock pot with water covering it, took it to 185. It was just as good as the day I smoked it. Heated up some tortillas, shredded some smoked cheddar, piled it on with some salsa and sour cream.

    Came out pretty good. Tri-tip was over cooked because I didn’t believe my thermometer. It was up to temp in 90 minutes. Thought I might have just stuck it in too far (that’s what she said). So I left it on for another 30mins which is my usually time...

    Also cut the tri-tip correctly thanks to this thread :bananadance:

    some brisket pic of the one I did Friday...First one is about 1hr into it, 2nd just came off the smoker, 3rd is sliced. A smidge on the dry end but still tasty, we have about 1/4 left from an orignial 10lb brisket, before trimming and cook.

    Normal price down in Homer is $6.99/lb, but only for a whole packer. If you ask the butcher to trim it, the price goes up AND you still pay for the whole pretrimmed weight.

    Texas has a lot going for it. HEB is one of those things.

    Just seems like too much for a poor cut of meat. I’d do it in a heart beat for $3 though.

    Not sure about Costco. Closest one is an hour away.

    I’M sure there are places within a few hours of me to get brisket cheaper. But locally $6/# is as cheap as I’ve seen it.

    First time ever cooking short ribs. They were better than I expected. There just had salt in them and smoked with pecan smoke for about 6 hours.

    Brisket is 2.99 here, I need to cook one again. But, last night burgers on the GMG was a fail. Igniter took a shit. One call, new on the way, free. Cast iron pan saved the.. night for the burgers tho.
