Trying to decide between the BORA .75 or BORA 1.0 or the Spidertrex 1.25 spacers...

Your wheels right now have ~ a 4.7" backspace so to get them to a ~3.5" backspace or ~0 offset the 1.25" spacer would work. If you want less tire sticking out than that then go less spacer. To figure out ~ how much tire will stick out jack the truck up measure off the the rotor hat each spacer width and put the wheel at that point. This will give you the ~ amt. of the tire and wheel sticking out. Then you can order the spacers that would best suit your needs. I run BORAs and like them plus you can order them in any width from .5" to 2" depending on your needs. They are good quality also.

The wheels I have right now... Do you mean the ones that are on the truck now (stock factory) or the black ones?

I was talking about the black ones. Check the specs of the stock ones if they are the same you can mock it up with them if not then don't bother until you get the new wheels and can mock it up to get the fitment you want

This is what I am finding... So 15mm difference?

    Tacoma OEM (silver powder coated)
    - 16x7
    - 15mm offset

Tacoma Gloss Black Baja Alloy Wheels
    - 16" x 7"
    - 30mm offset

Not real sure how to interpenetrate that. Might just get both the BORA .75 and the Spidertrex 1.25, try them both and send one back. Just want them to fit close to what the OEMs are and not stick out much more, if possible.

So the stock wheels have ~4" ob back space. If you don't want much more than stock then get the .75 spacers that will essentially make them stick out ~.25" more than the ones you are running now. I think that would be good. The 1.25 would be ~.75" more than stock an in the middle would be BORA 1" which would be ~.5" more than stock
