    Good luck, seems like most do get taken care of. But it sure can be a battle sometimes too.

    Did my first tri-tip tonight. With a few other things.

    Tri-tip. Italian sausages. Doctored baked beans. Bell peppers. Anaheim peppers stuffed with cream cheese and crab wrapped in bacon. Onions stuffed with butter and brown sugar. Italian pork meatballs stuffed with parmesan cheese and wrapped in bacon. Think I'm set for a few days now.

    No never could find it around here it was a Ca. only type thing for years. Butcher I got it from used to be in the restaurant business and said it is all around, most of the better restaurants use it for roast beef. It was good and will do it again, turned out better than pot roast with better texture but not quite the same as a high end steak. Or even a skirt steak which I really like. It is different and that can be a good thing.

    It's primarily a sandwich or a tortilla meat. Easy to grill, cook to temp, slice thin(ish) diagonally. Should be able to find at most Costco, but it is kind of regional as far as popularity I guess. It'll turn into a football if you slow cook it or get it too much past medium rare. Some folks bbq it wrapped but I just throw it on the grill spiced as you like.

    Don't try to get too fancy with it. It's usually a good piece, but simple and straight forward. Rubs, s&p are good. Even a sauce if it's not heavy, not a marinade piece. People do it but it ruins it. Even though it kinda is a roast, it's not a traditional roast. It is it's own piece. Each cow only has one per side so it is kind of a specialty piece, but should be available year round.
