    Lots of good info in the link that @WBF610 posted. The smoke ring is purely aesthetic and comes from nitric oxide reacting with the myoglobin of the meat. Two things promote the smoke ring:

    1. Increasing the amount of NO available to interact with the meat surface.
    2. Increasing the meat surface's ability to "grab" available NO.

    The first is done by burning a fuel that puts out a high(er) level of NO. A hot charcoal briquette does this better than even burning real wood, hence the recommendation to put a burning piece of charcoal in the electric smoker. It ought to burn fairly hot, though, not just smolder at a low temp.

    The second is done by keeping the surface of the meat moist so that it interacts more with the NO available in the cook chamber. Spritzing and mopping can help with this. My preferred method is to try and time the application of the rub so that the stage where the salt is drawing moisture out of the meat happens while the meat is in the smoker, rather than while the meat is in the refrigerator. In my unscientific experience, this leads to the exterior of the meat being more moist for a longer period of time while in the smoker.

    I have seen those! Those barrels cost a good bit more than the 55 gallon ones and I'm wanting more diameter more than I'm wanting more height. I'm thinking some sort of old propane tank or some old water heater cut down and rigged up like an UDS is what I'm needing to do. Too many other irons in the fire to worry about that now!

    That's what I was looking for, but couldn’t find it.

    It’s also temp related, the quicker the meat gets to 170 or so, the less of a ring. I put my meat on cold, and get some nice rings. Of course this all means nothing as the ring does nothing to the flavor. It does make it look pretty though!

    Good point as well!

    Yeah, it is just for looks, but a big smoke ring on a slice of brisket or a sizeable chunk of pulled pork sure does make the mouth water!

    VERY good rub. Can't go wrong. I'm sure my next order will be soon, getting close to smoking season again. Also will need some we are thinking about doing a purchase a BBQ meal fundraiser for my nephews scout troops, they are trying to raise money to buy a new trailer. We are working out the details on it now so will need some rub to help fill those orders lol.
