    Do you have the diffuser in? Looks like it but hard to tell. Still haven't run mine yet with the Cajun Bandit stacker kit with the diffuser. I really need to cut 2 more notches in it for it to sit lower where the water pan does in a WSM. But if that is your diffuser I am thinking maybe I don't need to... Actually have a 22" diffuser plate I need to return. Well past the window though and think I did it intententially. So that I'd have an excuse to buy a 22" WSM :anonymous:

    Hey now! It got up to 29° today! And winter storm warning for 2-4" starting at 1:00 tomorrow :pout: Guess that is better than the foot we got Mon-Tues

    Wanted to do pitfaced rub on the cap steak tonight but my son decided he wanted some steak too. He eats his well done and because of the difference in thickness (he only gets sirloin if he is going to eat it charred) hard to reverse sear it. And with it being 20 degrees hard to get it back up to temp fast anyhow.

    Pissed me off went to get a piece of bacon to wrap mine and found he had eaten all the bacon in the fridge. Well guess the acorn don't fall too far from the tree in some things. So I went with Montreal steak seasoning never used it on cap steak but had it set in mind was going to put rub on it.

    But for some reason I have a real strong desire for brisket now...

    Brisket crisis avoided for now. And maybe only a few hours but damn that was freaking awesome.

    Was at Costco today and picked up a package of 3 cap steaks but put it back. Wasn't the price as much as the size they were huge. Well yes and it was $70. Ended up getting a package of 2 instead that were smaller. Right now I'm thinking I should have got the 3 pack. And not vac sealed and thrown the other 2 I got in the freezer already. I did notice they had Montreal steak seasoning $5.99 for a huge honking container of it there is more of that in my future too, I forgot how good it can be.

    Damn it I need to stay off this thread, all this talk of oysters. And now I have a really strong urge for grilled scallops. Been months since I have had some bacon wrapped grilled sea scallops. Even pan fried bay scallops would do right now.

    Costco opens in one hour. Snow storm doesn't start for 4 more hours. Just finished shoveling the gasser off and that part of the deck, just in case I do grill. Good chance for the storm to move into a blizzard. I have grilled and smoked in blizzards before but it isn't my favorite thing to do as I get older. Considering putting my long johns back on as it is.
