    I’ve thought about building a grate setup for my Weber to hold a layer of coals above the pizza, to help the top cook. I think the lack of dome heat is the limiting factor for most non-traditional pizza cookers. Hard to cook the top before the crust burns.

    I make the dough using half regular and half bread flour. I use cornmeal under the peel to aid insertion. I am using a lot more charcoal than
    oscolivar1 seems to be using. I also have the baking steel as well, I thought this would help get the top browned faster. To be honest I have only used the setup twice and now that is is nicer outside I will be doing some more experimenting.

    would have been better if it was more than just a cheese pizza but, I mean it's just bread, that is better than bread right?

    I've done tomato sammies, bologna samies, burgers, bbq chicken... pretty much anything that is good on bread is better on pizza (maybe not so much pb&j and maybe banana would be best omitted from a pizza sammie)

    PB&J Dessert Pizza would be the bomb, get the PB a little melted with some heat, nice dollop of Jelly and then maybe some white chocolate shaved on it.

    yeah man, or get a chocolate or s'mores pizza and just throw some peanut butter on that and have near reese's pizza dang man the wheels are turnin now! chocolate and banana aint bad together either now that I'm on this train

    No chocolate and banana are darn good together. Maybe some nutella on there if you like it. I did a nutella and banana sammich once and that was great.

    depending on your temp of your stone etc the 00 flour is for higher temp cooking. regular flour burns and is bitter, 00 flour has the authentic crispy but not bitter taste.
