I have the opportunity to buy a set of 4 Method wheels wrapped in Falken Wildpeak AT3W (2265/70R17) with ~15,000 miles on em for a pretty good deal.

My question is, the tire rating of this particular set is 115T, which to my understanding is a lower rating for anything beyond road use. I'm no rock crawler, and for the time being still have stock suspension, but I do enjoy sometimes taking my Taco off road on easy/moderate trails, and I regularly go camping places that require some off road driving on rough/rocky roads/trails.

Are these tires going to fail me or are they sufficient?

    115 is load rating.
    T is speed rating.

There is no “off road rating”, the D and E ratings you hear people talk about is simply load rating. A higher load rating usually has a stiffer sidewall that has some advantages and also disadvantages off-road.
As long a 115 load rating is enough for the trucks weight, you’ll be fine, don’t worry about it.
