    I still like the ones with heavy glass lids. The light weight plastic ones need an upside down coffee cup to weigh it down a bit but it still spits out sometimes. o_O

    I’m guessing it has to do with digesting the complex carbs in beans that our body struggles with. Probably enzymes in carrots that break the carbs down into more simple carbs/sugar.

    At least that’s how my Homebrew mind works.

    You'll want to leave some extra cooking time; the flavor is great but there is some more connective tissue to break down.

    You are correct. The sugar "raffinose" is what causes the gas, and the enzymes in Kombu (possibly in carrots as well?) break the raffinose down into something more digestible. Bonus is that you get more nutrition from the beans that way, too.
