    Use vinegar to thin sauce for pork. White is good but Apple cider is better.

    Called local places... one said yes charcoal is on sale for the low low price of ... 9.79 for a giant 15# bag. Flyer from Wally world says 7.88 for a twin pack of 15lb bags. 45 miles away, but so be it. On sale my ass!

    Good simple advice. Agreed, if you want a quick one ingredient solution, ac vinegar is it. There’ll be enough fat to mix with the acid.

    Rubbed ribs ridin' smoke. :) @Cold Iron I'm making your recipe for mac n cheese, on the smoker. I will be running at 165* then 225* for 3 hours or so. Should the mac n cheese be cooked that long? :notsure:

    I used to keep a journal now I just post pictures on here as my journal :anonymous: Let me look and see what I can find. You have to let it go long enough for the cream to be absorbed but if you go too long it will dry out on you. Toward the end stir it to check, but best not to stir until you need to.

    Edit found it. But if your using a larger batch might take longer. 3 hours may be just about right for you with lower temps-
    Timing is critical on those it took me 2.5 hours any more they would have been over done. That was at 240 degrees.

    Between TDYs, surgeries, work, and family, I haven’t had much time to fire up the smoker.

    Got up early drinking coffee and setting mine up for the brisket, I’ve missed the smell and solidarity that comes with bbq-ing and smoking
