    Did a fish fry yesterday afternoon.

    My favorite breading mix....I don't often fry stuff....but when I do, it's House-Autry all the way. Also use their hushpuppy mix and add onion & jalapeño.

    Did a taste-off competition between 4 hot sauces....hit each piece with three shakes.

    Ed's Red was number one (best stuff on oysters !!!!!!)

    Crystal was number two, but much easier found in any local grocery store....and works on a wide range of food.


    Fun cook.









    Oh yeah.........used this great stuff to dust on the fries...Mighty tasty.

    Got them chops drying out. Just did salt, black pepper, garlic powder, ground cumin, and chilli powder. Gonna leave em in the fridge uncovered till tomorrow so ~20 hours or so; should be nice and dry and sear up well.

    I didnt quite get the sear you did @la0d0g i cooked mine in a lil bacon grease and what rendered off the fat cap so i couldnt get my heat above med without smoking the grease up but i was able to cook it thoroughly on the stove so i didnt heat the house uo with the oven. Dropped some asparagus and shrooms in on top of the drippings after i splashed some chicken broth to deglaze and hit the shrooms with mozz and parm for the asparagus. Itll be a week before this vid is out. Tryin to stay a week ahead to stay on schedule during my beach trip next month
