For a great camping meal thats easy, impressive, and sure to please everyone...Paella!

    Made some Paella over the campfire this weekend. Took the Taco up to Marble, Co. for some adventuring on the forest service roads.

    This was a big hit, and super easy once temp control was mastered.



    Here is the process I used and a few more pics:

    I burned down a bunch of oak to make manageable hot coals to cook over. I keeps a fire going on the side to draw from to regulate temp during the cook.

    I subbed scallops for mussels at the request of a guest.

    I eyeballed and added broth and water as we went until the rice was ready. Then just let it go until almost burned to develop that delicious soccarat.

    Stuart (doggo) did get a few bites of chicken and chorizo, but not a full plate as the rice had onions in it.

    The skottle won’t work. The localized heat in the center would give you fits on a disc.

    I’m gonna try a paella on my disc, but I’m gonna have to source a bigger more even heat. My disc, juuuust fits in my propane Weber. I think it will work.

    I hope I don’t waste my Bomba rice.

    Yeah, Its hard to tell the depth of that thing from the pics but having vertical (or near vertical) sides is really ideal for proper broth absorption and addition.

    LOVE cooking paella over an open campfire. Did it a few weeks ago for a family retreat in Arkansas and everyone loved it. Posted pictures on Facebook and the Scoutmaster of the troop I volunteer in said "That's what we're having this weekend on our campout." So I ended up bringing my big pan and teaching the scout troop how to make it.

    Here's a picture from the family meal, next to a magnum of wine for scale. Easily fed nine of us and we had lots of leftovers for lunch the next day.

    I keep my paella pretty traditional. The concept of mixing chicken/chorizo with seafood is an American thing. You wouldn't find that in Spain. So I typically do one or the other. This one had chicken thighs, chorizo and green beans.

    We have a member of our local ski co-op (SkiVenture.org) that worked at your ne of the big food service companies. For one of our summer work parties, he cooked up a paella that served more than 40, pan had at least a 4’ diameter, placed on bricks with sterno cans placed between the bricks. Covered the whole thing in foil…it was both ridiculous and delicious! I’m looking for pics…
