    Cooked them to 170 degrees.. i may pull them at 165 next time.. and i might brine them for an hour or so too

    I brine them overnight in salt, water, and some basic spices, then smoke to 165. Comes out nice and moist and tasty.

    I usually brine leg quarters and such, but i was in a hurry tonight.. I'll make sure to brine them next time. :thumbsup:

    I've started doing pork in brine for at least 48 hours. With chicken and pork i think it makes all the difference. Possibly even brine > rub. Put rub spice in brine. :D and rest wrapped in a towel in a cooler for minimum of two hours.

    We carry lots of stuff, all the time. Tools, recovery gear, etc. I like the little wells in the corners. The lids flip over and turn into cup holders. There’s a bottle opener on it too. ;)
