    Had a Fourth of July party at our community and they had pulled chicken and brisket(both barbecued :drool::hungry:) with salad and potato salad. It was delicious! Sometimes brisket if not cooked right is lousy, but they did it right.

    Ken, To me the two keys to cooking a quality brisket is the initial trimming of the brisket fat and knowing your grill.

    I have a Weber Smoky Mountain grill. I use aluminum foil to block the heat rising on 2/3 of the grill at the water bowl line. I use sand in my water bowl for heat retention. This allows heat to rise easier on one small section of the grill. I place the brisket with the point side on this end. I place the top vent of the cover on the other side of the grill. This allows the heat to rise at the point section of the brisket and flow over the flat side of the brisket to the vent. The attempt is trying to have the thicker point of the brisket be subjected to more of the heat and the thinner flat portion of the brisket be subjected to less heat thus having an even cook for the entire brisket.

    Better drum smokers have the ability to use the same process by adjusting plates in the cooking area to control the heat flow from the firebox.

    Greetings. Checking in to the Great Grumpy Geezer Group. Turned 60 last year, thankfully still feel 58 1/2 so I got that going for me which is nice.

    Good morning gang, up early today, couldn't sleep. Headed out tomorrow early also for about six days of backpacking down by Mammoth Mountain in the Ansel Adams Wilderness , bordering the east side of Yosemite Park. Looks like snow high up over one pass I have to go over the second or third day, depending on my start point. I need new shoes, but can't get to a suitable store to fit some new trail runners. So a few hours of hiking over snow and at least by one still frozen lake per pics I viewed yesterday. Those pics from a recent trip by a poster on Highsierratopix confirm snow still high up.
    Hey, I can bicycle camp now, attaching a stove on my handlebars, just got this the other day, soldered onto a Primus 96 stove. One of two styles I just got last week.

    Morning all:
    Where's the auto wash button on the truck! What the heck, it seems to do everything else automatically so there must be one on there. :rolleyes: :laughing:
    Just got done washing it, at least it stayed clean for a couple of days. I have a dirt driveway, my buddy said I should get it blacktopped to keep the dust off the truck. I said what about all the pollen, he didn't have an answer for that, the pollen is way worse than the little bit of dust from the dirt driveway.
