The whole suspension thing is about to get done and I want to get tires at the same time.

How practical are mud tires for street driving? I am weight KO2 versus KM3.

A long time ago I had them on a Jeep but that is a poor baseline for thinking about it since my Jeep drove poorly regardless of the tire and every part of it made noise. And I didn't street drive it much.

A few additions to make me feel cool.
Go with an A/T over a M/T. The M/T's will make a bunch of noise and will wear twice as fast.

Is there a mud tire you would recommend?

Sorry I do not use M/T's. Not a big BFG fan anymore due to the rubber on the inside of the tire being so thin you can barely put a patch on them. Duratraks are good for 20K miles but they have a 2 ply sidewall so that's not the best option. I am currently running Nitto TG's but I know the Nitto RG has gotten a lot of love and has a pretty aggressive tread. Take a look at the Nitto Ridge Grappler. Might be a good compromise between a M/T and an A/T.

M/T will get chewed up on the street and you will look/sound like the Douche bros driving around on roaring tires. I run Falken Wildpeak AT3W on one set of wheels and bfg KM2s on another. I put the A/Ts back on when I will not be wheeling for a few weekends.

If you're not actually going to wheel the truck just get some all-terrains.

I have thunderer tracgrip mt for over 50k miles on my truck. They are about wore out though. Lots of interstate driving to contract jobs. Not a lot of road noise either. I also have a lightweight regular cab...
