    I've dehydrated hundreds of pounds of fruits and veggies and lots of meat too - beef and venison. Just use lean cuts, trim off any fat, and marinade in a brine or a soy or amino solution. Never used any vacuum sealed anything, and never had any mold or rot problem. Just stored in regular plastic bags or mason jars. I mean, the cowboys could do it. The Aztecs could do it, and even earlier than them. Of course, they didn't have one of these, which makes the task a bit easier...

    JK, But I am curious why you took the rail caps off and added the foam tape?

    It's absolutely beautiful!! The wife and I are planning a trip to Vegas next year. This time we are going to be there longer. Would love to get out to see the Grand Canyon! Thanks for sharing that pic and the tip!!!
